Sweet Beet Salad with Toasted Pecans
Ingredients1 cup water
1 cup diced beets 2 cups torn red leaf lettuce 14 pecans Dressing: 1 tbsp honey 1 tbsp lemon 1 tbsp extra virgin olive oil Salt & pepper to taste 1. Bring 1 cup of water to a boil. Add your diced beets, salt and boil for 9 min. Drain, then put in the fridge to cool. 2. Toast pecans in a 400F oven for 5 min. Set aside. 3. Plate your torn red leaf lettuce, arrange the diced beets on top, and then your toasted pecans. Mix your dressing and drizzle it on top. Finito! |
